  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 2 cups of mixed vegetables (such as broccoli, carrots, and snow peas)
  • 1 cup cooked and diced chicken or tofu (optional)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • salt and pepper to taste


  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion and sauté for 2-3 minutes until softened.
  3. Add the minced garlic and sauté for another minute.
  4. Add the sliced bell pepper and mushrooms and sauté for another 2-3 minutes.
